I want to make the filling to my favorite lemon meringue pie recipe (I don’t know if the filling qualifies as &#ts;02cu28ard”) but not the meringue. Normally the pie is baked for fifteen minutes until the meringue is browned. My question is: can I skip the oven baking if I’m not making the meringue, or does the filling itself need to be baked? It has egg yolk in it, but it gets cooked for a certain amount of time in a double boiler..
